Prep Cook 

A Prep Cook, or Preparatory Cook, is responsible for providing a supportive role to kitchen staff in the preparation of meals and ingredients. Their duties include organizing and labeling food items in storage closets, performing tasks like chopping ingredients and sanitizing their work station during and after service.

 

Prep Cooks perform various food preparation, cooking and cleaning tasks to ensure the kitchen remains efficient in creating and delivering dishes for patrons. 

 

Responsibilities:

  • Completing all tasks, in order, on the prep list from the Head Chef or Sous Chef

  • Labeling and stocking all ingredients on easily accessible shelves

  • Washing, chopping and sorting ingredients like fruits, vegetables and meats

  • Measuring quantities of seasonings and other cooking ingredients

  • Parboiling food, reducing sauces and starting first steps in various dishes

  • Cleaning dishes, washing cooking utensils and cookware, taking out the trash and sanitizing kitchen

  • Adhering to all relevant nutrition and sanitary regulations and standards

  • Keeping track of ingredient inventory and collaborating with other kitchen and management staff to order resupply

  • Knowledge of various cooking methods, ingredients, and procedures

  • Hand-eye coordination

  • Time-management skills

  • Superior dexterity skills to operate cutting tools quickly and safely

  • Keen understanding of industry-standard best cooking and preparation practices

  • Familiarity with safe and sanitary food handling and preparation

  • Certified in proper food handling

  • Good math skills with a clear understanding of cooking measurements

Qualifications:

  • Must be 18+ years of age

  • High school diploma/GED will be an advantage

  • 2+ years NYC cooking experience preferred

  • Excellent oral communication skills required

  • Ability to speak and understand basic English (multiple languages a plus)

  • Food Handlers Certification Preferred

Physical Requirements:

  • Ability to stand and exert fast paced mobility for entire shift

  • Ability to transport up to 50 lbs. On occasion, and up to 35 lbs. Regularly

  • Ability to climb, stretch, and reach as needed for cleaning purposes

  • Some light to medium lifting will be required throughout the shift, anywhere from 2-30lbs.

Line Cook Position:

The cook will prepare meals and follow establishment recipes. Duties include preparing ingredients, adhering to the restaurant menu, while maintaining food health and safety procedures, sanitation and security of the kitchen and equipment. Cook, clean, assist other cooks and staff and deliver food in a fast-paced environment. Work may include operating a grill, oven, or fryer. Previous experience in a team environment and various cooking methods preferred.

An excellent cook must be able to follow instructions in cooking, follow the Arthur and Sons specifications, and deliver well-prepared meals in a timely manner. They must be quick in moving around the kitchen and apt in multi-tasking. A line cook will have experience in using various ingredients and cooking techniques. 

Responsibilities:

  • Set up workstations with all needed ingredients and cooking equipment

  • Prepare ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)

  • Preparing oven, utensils, and grill for shift

  • Follows all recipes, portion controls, and presentation specifications, as set by the restaurant

  • Coordinates the delivery of all foods within the preset time standards from the kitchen display system (KDS)

  • Demonstrates product standards and recipe knowledge daily

  • Sets up, maintains side work, and/or closes station for scheduled shift

  • Prepares and plates station food items according to specifications and preset time limits

  • Ensures safety and sanitation standards are met and maintained

  • Properly uses personal protective equipment

  • Maintains a clean, neat, well-groomed appearance and work station

  • Responds to all “call backs” and “echos” to ensure ordered food is prepared on time

  • Insures that hot foods are hot and cold foods are cold

  • Follows all company safety and security policies and procedures

  • Communicates any product run outs, equipment issues, and quality or service problems to the MOD immediately

  • Cleans, sanitizes, and organizes all kitchen areas, walk-ins, and storage areas according to Arthur and Sons NY Italian specifications

  • Develop and maintain positive working relationships with others and work toward the goal of customer satisfaction

  • Ensure adherence to quality expectations and standards

  • Cook food in various utensils or grillers and according to food health and safety standards

  • Check food while cooking to stir or turn

  • Recommending ideas for specials or seasonal dishes

  • Monitoring multiple food orders as new orders arrive

  • Ensure great presentation by dressing dishes before they are served

  • Ensuring each guest order has the correct food and sides

  • Keep a sanitized and orderly environment in the kitchen

  • Ensure all food and other items are stored properly

  • Check quality of ingredients

  • Performs additional responsibilities, although not detailed, as requested by the chef or manager at any time

 

Requirements

  • Able to work early mornings, nights, weekends and holidays

Dishwasher

To be successful as a dishwasher, you should be a committed, communicative team player with excellent time management skills. You should be able to prioritize tasks in a busy setting and adhere to all food safety regulations and procedures.

Dishwasher Responsibilities:

  • Ensuring the availability of clean dishes by washing dishes, pots, pans, and flatware, and stacking the clean dishes on the metro shelf for bussers to reset the dining areas.

  • Assist in restocking clean pots and pans for the line cooks to use for cooking. 

  • Preparing the kitchen for next shift by cleaning and restocking prep and cook stations.

  • Cleaning machines and appliances used in the kitchen, such as ice cream maker, pots, pans, and other appliances as required.

  • Unloading and storing deliveries from time to time. 

  • Sweeping and mopping floors, especially in the event that items are broken or spilled.

  • Taking out the trash and rinsing garbage cans.

  • Supporting other restaurant staff members by assisting with other tasks, as needed.

  • Reporting kitchen accidents or violations of food safety codes and procedures.

  • Performing other duties as assigned by ownership, management, or supervisors.

 

Requirements

  • Experience working in a restaurant, and knowledge of construction tools, methods, and equipment is required

  • Basic verbal communication skills

  • Strong problem-solving and communication skills.

  • Ability to work as an individual as well as with a team as needed

  • Ability to understand and follow written and verbal instructions

  • Ability to multitask

  • Detail oriented

  • Legal authority to work in USA 

Qualifications:

  • Must be 18+ years of age

  • High school diploma/GED preferred

  • 2+ years NYC server experience preferred

  • Available to work on weekends, days, nights.

Physical Requirements:

  • Standing is required for the majority of the shift (90%)

  • Be able to walk up and down more than 2 flights of stairs, sometimes while carrying items

  • Some light to medium lifting will be required throughout the shift, anywhere from 2-30lbs.

Salary or Hourly Rate

Cooks up to $28/hr, Dishwasher up to $22/hr
